Smoked Haddock Fish Pie

 

While it's snowing and freezing around the country, this authentic smoked haddock fish pie recipe is sure to warm up your family and friends.

Ingredients for 4 people

400ml Candia milk

4 smoked haddock fillets (1/person)

100g prawns, cooked and peeled

1 leek

3 large potatoes, peeled, and sliced

1 lemon sliced

1 tbsp olive oil

40g flour

 

Method

1. Pre-heat oven to 200C/Gas 6.

2. Heat the oil in a pan over a medium heat. Add the leeks sliced and fry for 2-3 minutes.

3. Add the flour, stir well and cook for 1-2 minutes. Reduce the heat and slowly stir in Candia milk. Keep stirring until the sauce has thickened. Simmer gently for five minutes.

5. Add in the prawns and season with salt and pepper to taste.

6. Place half the sauce into a deep pie dish. Place the haddock fillets on top, then cover with the remaining sauce.  Add the sliced potatoes and season with some more black pepper. Top with the sliced lemon.

7. Place the dish on a baking sheet and bake for 40-45 minutes, until the potatoes are golden and the fish is fully cooked.
