Blackberry and Apple Crêpes
Autumn is certainly a great season for delicious British-grown fruit such as blackberries and Cox's orange pippins. Try these crêpes made with Candia Milk for a deliciously fruity autumnal dessert, just one of our delicious milk recipes.
Makes 8-10 pancakes
Ingredients:
125g/4oz plain flour
pinch of salt
3 eggs
250ml/8fl oz Candia semi-skimmed UHT Milk
45g/1.5oz butter
Filling:
3 Cox apples
250g/8oz blackberries
1tbsp caster sugar
1/2tsp ground cinnamon
1tbsp water
Method
1. Sift the flour into bowl with the salt and make a well in the centre. Break the eggs into the well and whisk until they are thoroughly mixed.
2. Add half the Candia Milk in a steady stream and whisk, gradually drawing in the flour to make a smooth paste. Add the remaining Milk and whisk once more to mix. Leave to stand for 30minutes.
3. Make the filling: quarter the apples and remove the cores, then cut into 1” slices. Lay the apple in a baking dish and add the blackberries. Mix together the sugar and cinnamon and sprinkle over the fruit with 1tbsp water. Mix well but gently to avoid breaking the apple. Bake in preheated oven 350ºf/175ºc/gas mark 4 for 15 mins.
4. Melt the butter in a non-stick pan and pour the excess into a bowl. Reheat the pan and quickly add a small ladle of batter, rotating the pan to completely cover the base. Fry quickly over a medium-high heat until set on top and brown underneath. Loosen with a spatula and turn over to brown the other side.
5. Simply repeat until all the batter is used. Serve each crêpe with a portion of the baked fruit.
